Can we do that, (and in the demo)? and how?
I read in the FAQ that you can but I can't figure out how.

No, you can not mod the demo. But you will be able to mod the full version and use JO models in it.

Yep, most likely... someone told me that they already confirmed that in an official interview. :)

for the full game your suppost to be able to just throw your old skins in the same way you did in the last game and it will convert them for you

(like it needs to do anything...everything looks the same :))

I believe the original idea was for Raven to release tools that would convert JO models and skins for you so that you could use them in JA. Then one of the developers wriote something so that the game itself does the conversion for you. Pretty cool! This gives us so many options right off the bat.

Yep, you're right there. :D

And I'm still wondering if we'll be able to import the JO SP characters as spawnable entities.

I spawned some Jawas into the Tatooine demo level and it seemed more 'alive' and gave it more a sense of place. If you could spawn the Chiss bartender and Ugnaughts as well, it would go some way to giving such places more 'atmosphere'. ;)
