Hello!

The topic says it all. Does anyone know how that is accomplished? And if it is disabled, does the next module entered check on the availability?

If I remember right, somewhere in the module properties there's a check box that says disable transit, whether or not that cuts out the party selection or not I'm not sure.

The Unescapable byte field in the .ARE file for each area controls if the player can change out their party members (and if map travel is available in case of KOTOR 1) by default.

You can also toggle this via a script with the SetAreaUnescapable() function. If you pass TRUE as parameter value fast-travel and party selection is disabled, if you pass FALSE they will become enabled.
