If I set up a SG and an enemy enters it range. Does the enemy gain shield protection?

no, it only applies to you... well, I think your allies too, though I could be wrong on that part

if that did happen what would be the point of a shield generator?

it would make battles last longer cause everyone's units would have more HP :P
