I'm thankful that the Good Lord has gotten my family through some of the darkest times of our lives this past summer. My sister-in-law is doing well with her breast cancer treatment and should be cured, my sister made it through 6 months of chemo, surgery to remove her lung and is past the halfway mark of her radiation treatments for her cancer, and I've graduated from physical therapy for my knee replacement and will hopefully be done with the cane in a couple more weeks.

Given my complete dislike of turkey, I'm going with pork ribs with a side of corn on the cob and baked beans.

Bah humbug, terrible thanksgiving, terrible year. Only things to be thankful for this Thanksgiving is the Texas aggies put my Longhorns out of my misery for this college football season and the year is one day closer to being over.

Happy belated Thanksgiving. Still enjoying leftovers. The turkey of course, Eggplant lasagna, stuffing, sweet potatoes, and mama's hand made cheesecake.

I'm now enjoying my favorite Thanksgiving leftover: turkey pot pie. Turkey, veggies and tons of gravy stuffed inside a scratch-made multi-grain butter crust. Every year I look forward to it more than Thanksgiving dinner itself!

Ooh, that sounds awesome. We do the same with ours--turkey, a package of mixed frozen veggies, about a half package of frozen Southern style hash browns, poultry seasoning, tarragon, chopped onion, a bit of salt and pepper, and lots of gravy. Pour into a pie crust (not the yucky frozen ones, do homemade or the refrigerated Pillsbury pie crust), and bake about an hour. Heaven in a pieplate!
