I'm not positive, as I never play DS, but I think that what Jedi your NPCs become depends solely on your alignment and not on influence, meaning that if you have 100 influence and are a Sith, you can train them to be Sith as well.

High Influence means the NPC will be the same "Alignment" as the PC. Low Influence means the NPC will be the opposite "Alignment" as the PC. If you are playing DS then you have take the LS point hits in order for him to be the same "Alignment" as you.
