Probably the most reliable way to do this is to change your PC's gender in a different savegame, one that occurs before the Bastila romance starts. Therefore, if I'm guessing correctly, the Bastila romance won't start, and the Carth romance will. I'd look up the globals for you, but I don't have KOTOR 1. Good luck!
