How to take down AT-ATs?
Can someone tell me exact the steps for taking down AT-ATs with a snowspeeder?
Because the tow cable always releases after 1 round.
I don't know how I keep the cable around it, and how do I have to finish the work?

the reason why it becomes detatched is because you get to far away from it. Try holding S for pc or back on right stick for xbox to slow your self down.

If you are playing Single Player the easiest way to take down the walkers is to let the computer A.I. fly the speeder. The awkward camera makes navigating the AT-AT legs very hard.
Spawn as a pilot in Echo Base and jump into a speeder, immediately switch to the tow cable gunners seat and any A.I. an order to "hop in". Sooner or later one will spawn to take the pilot seat. Once you are airborne give the pilot (repeated if neccessary) the "all clear, move out" order and he will begin an attack run on the walkers. Pay attention using the radar what side of the snowspeeder the walker is coming up on and look as far over as you can in that direction. As soon as you see a walker leg enter your view fire the tow cable, if you miss the near leg you will hit the far side leg. The pilot can navigate the walker just fine. While he is wrapping up the AT-AT use your rear cannons to fire on the ground to protect yourself from spawning stormtroopers with launchers. You wont get them all but you'll get a few. I've succeeded with this many times and even had two snowspeeders wrapping up the same walker at once.
As soon as the walker is down, take over the pilot seat and fly your speeder back towards the Outpost and provide ground support for the turrets. As soon as the Outpost is clear, land at a repair droid to fix any damage you've taken to your speeder.
Rinse and repeat.

don't even have to land.. just cruise around the map while pilot automatically repairs the speeder.

If you commandeer an AT-ST you can damage the walker, and missiles will also damage the AT-AT, but it takes a LOOONG LOOONG time, (just like in SOTE game) compared to the tow cables.
Let me tell ya, having an AI pilot makes tripping up an AT-AT hard.
So save yourself the trouble and capture their AT-AT spawn point as soon as you can, though it is satisfying to trip up at least one for the "movie effect." ; )
Sadly, the Rebels can't commandeer the Empire's AT-AT's (just like the Droids can't take over the Republic AT-TE's), only the smaller walkers.
It's also too bad that you can't fire your blaster while riding a Taun Taun. In every other Star Wars game you can do that, but not in SWBF for some reason. I don't think there's any way to heal a Taun Taun is there?

If you're playing PC...
Then just hold the S button down and circle around the AT-AT. That's the e-Ziest way.

I managed to take down an AT-AT with a Snowspeeder, alone, by switching from pilot to gunner, shooting the cable, and quickly returning to the pilot's seat and make the rounds. Nice.

I have real problems with the flying vehicles, whenever I get in them, the controls invert, so I switched them, and then I can't play out of the fighter because the controls are inverted. 
stuck in an eternity of sunshine and chocolate.

In setup there should be seperate controls for each "type" (general vehicles, ships, infantry). Try that.

go to the option smenu and take control options the klick vehicles o(or if it is starfighters???) and unchek the box that says invert controls and then the controls wont be inverted btw you actually fly with inverted controls in real life but not with a mouse that's too dificult
