Will you control the entire ship?
Or can you control individual turrets/commands?

Either way it would be awesome to
see a star destroyer go up against a mon calamari frigate head to head. Im all in for the space battles

No, you will not control just one ship, you will control severl star destroyers (if you are the Empire), it's support vessels, and fighters.

You'll decide where they should go, who to shoot at, and they'll do the rest.

You mean like multiple targeting like a real ISD, right? Well, it might be something like you can engage two different targets (two sides of the ship target two different targets.)

dude, it's not going to be released for probably 8 months or so, so I'm sure they won't release anything more till E3, then you'll get your info.
