As RedHawke said, you'll need to use KGFF instead of the Bioware GFF Editor. In KotOR Bioware introduced two new types of datafields in the GFF format which were not present in Neverwinter Nights, which the editor was made for.
The placeable cameras use both those field types (one holding camera orientation values and one vector holding the camera position), and since the GFF Editor doesn't recognize those fields it will not read them, resulting in them being stripped when you save the file. KGFF has support for both those field data types and will let you edit them as well.
This problem is most obvious in GIT and minigame ARE files, but there are a few other files that uses one or both of the Orientation and Vector fields as well, though which ones escape my mind for the moment. Opening/saving those in the Bioware GFF Editor will result in similar data corruption.
