I'm absolutely sure my system can run KOTOR (in fact, it did, back when I had Win XP).
The hardware scan that comes with KOTOR says that my Detonator Drivers are not up-to-date, but those were Win XP/2000 drivers and were discontinued anyways (everything on the hardware scan passed except for the Video portion)

It will run. Which KotOR version are you installing, the 4-cd set or BOPC?
Not positive, but I believe the 8 series uses the same driver as my 7900gs, which is 195.xx... Runs both KotORs, using Win 7 x64. Installed using no compatibility mode, allowing Windows to install as it chose. K1 - BOPC dvd, no need to update. I have installed the 4-cd version on a Vista machine, and then just used the built in updater - thanks BioWare for continuing to support the game... TSL - had archived the official patch, and decided to right-click on it, and have Windows analyze for compatibility mode. It chose Win XP SP3, and so that's how I did it, as well as this method for the HQ movies and music .rar's.
When going in to play, use the same method for playing as you would for Vista - especially the dual-core fix, which is important even for Intel C2D users like myself. In-game, set your graphics settings to high textures, leave AA and AF off (you can set these in your nVidia control panel, if you like, and it will overide the game settings without upsetting the game). Leave on shadows and grass and v-sync, your game will not glitch with these on, even on Dantooine.
